I love the way I feel after I've had spinach. There's no comparison. Paired up with a powerful burst of lemon and the high effects from antioxidants in thyme and oregano no one can lose.  I only had chicken legs in the house, but I used a food thermometer for the first time and they came out perfect.

My Autoimmune Disease

 I had felt lonely and desperate to connect physical and emotional abuse to autoimmune diseases. A group I joined, with a doctor in charge, I had been sharing my personal story feeling the connection. I have seen the threads open up since then with the many beautifully shared stories from women to the same connection solidifying my thoughts bringing comfort sealing the statistics. I remember pleading for help when I could feel what the poisons had done to me with a reply 'Why do you want to do something with this' feeling devastation. #autoimmunedisease #abuse #lorijeanfinnila

Healthy Thyme, Lemon, and Garlic Roasted Chicken #lorijeanfinnilainthekitchen #healthyeating #medicinalbenefits

This is an easy chicken with many healthy benefits from garlic and thyme. Just squeeze half a lemon over chicken after rubbing olive oil on it. Add sea salt, ground black pepper, and thyme all over. Thinly slice 2 large garlic cloves and stick them under the chicken skin throughout including the cavity. Use a couple of slices to gently rub over chicken before spices for a robust hit. Put the leftover squeezed lemon inside chicken and a bit of filtered water on the bottom on the pan. You can add water to the lemon juices and olive oil mixed with drippings for a gravy the next day after skimming off the fat on top. Yummy!
