Chicken Pasta Salad with Apple Cider Vinegar Green Herb Dressing #lorijeanfinnilainthekitchen #healthyfood

 





1 1/2 c. uncooked pasta

1/2 c. steamed organic sliced carrots

1/2 c. steamed organic broccoli

1 lb. chicken breast

Dressing : 1/2 tsp organic herb spices

3 tbsp organic Apple cider vinegar

1/4 c. Organic olive oil

1 clove of garlic minced

Salt and pepper to taste


Cook pasta al dente. Drain and put in the freezer for 10 minutes. Chop the chicken into cubes. (I used roasted chicken from yesterday.) Steam carrots and broccoli till tender. I would use two different pots or times for these. Chop the broccoli when done. Put both in freezer for ten minutes. Make your dressing while your ingredients chill. Then mix everything together including the dressing. I added 1 tbsp at a time for the dressing. I had some leftover. This will make 3 or 4 servings great for a light cool summer dinner or lunch.

Lori's Ground Turkey Meatballs with Thyme, Oregano, and Crushed Tomatoes #healthyfood #yummyeats #lorijeanfinnilainthekitchen

 


Today I made some meatballs out of ground turkey. Red meat hasn't been agreeing with me during this pandemic and my stomach is also uneasy to strong spices right now as well.

 

Lori's Turkey Meatballs

1 lb. Ground Turkey (I use no spice natural flavoring.)

3 cloves of minced organic garlic

1/2 a medium organic onion finely chopped

1 tsp organic oregano

1/4 tsp of organic thyme and a pinch

1 1/2 tbsp organic Olive oil

3 slices organic white bread

1/2 tsp sea salt

1/4 tsp organic black ground pepper

1/8 c. Organic milk

24 ounces of unsalted organic crushed tomatoes

Place ground turkey in a large bowl. Put bread in toaster to lightly brown. Mince garlic and chop onion. Add to ground turkey. Also add 1/4 tsp thyme, Oregano, 1/2 tsp salt and 1/4 tsp pepper. Add 1/2 tbsp olive oil and milk. Break the toasted bread into tiny pieces and add to mixture. Stir together slowly to give the bread time to incorporate into the stuffing mixture. Once mixed through let it set while you put 1 tbsp  of olive oil into a large fry pan at medium heat. Roll 15 meatballs, almost 1/4 c. of ground turkey meatball mixture. Once the pan is sizzling add all meatballs and brown 3-4 minutes on each side. Add sauce, pinch of thyme, and salt and pepper to taste. Stir everything and simmer for 2 hours. Serve over your favorite pasta. I suggest spaghetti or penne.

I love slow cooker soups. It makes my day so easy knowing I have healthy food ready for me at the end of it. I had been making a different recipe that I found of navy bean soup. I had always loved it. I actually like this better. And with the pandemic I have to eat milder so this was the answer while still getting my extra herbs in my body for healing and immunity. Didn't have parsley so added 1 tsp of oregano in full instead. Also, I soaked the beans overnight to rinse out any small amounts of pesticides that may have been on them. And of course use filtered water for the soup and the soaking of the beans.
